In 1998, restaurateurs Paul Fleming and Bill Allen opened their first Fleming’s Prime Steakhouse & Wine Bar in Newport Beach, California. They envisioned a new kind of steakhouse with an atmosphere that was sophisticated, lively and inviting—an inspired, contemporary evolution of an American classic.

From the beginning, Fleming’s would feature the very finest aged prime beef. The service would be gracious and indulgent. And, to enrich the dining experience of each guest, the wine list would offer 100 premium selections by the glass. Called the Fleming’s 100™, this award-winning wine program helped Fleming’s raise the standard of steakhouse dining to a whole new level.
